WHere is an easy version of a beverage from a new menu. This is a batch prepared mix which is packed full of flavours of the Christmas time, which makes it perfect for your celebration. Save the extra syrup for brunch beverages, desserts, or to make another batch of this cocktail.

Serves 10 people
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (from the recipe above)
A few cranberries, for garnish
Mandarin essential oil, to finish
Method
Making the Cordial: Place all the ingredients inside a pan, heat until it reaches a light boil, agitating to dissolve. Then, take off the heat and let it to reach room temperature fully. Transfer into a clean bottle, cap it keeping it chilled, it can be stored for about a month.
For the Batch Mix: Combine every liquid ingredients in a large bottle, leave to sit for an hour, then filter it best through cheesecloth, so it's completely strained.
For serving: Pour 85ml from the batch mix into a stirring glass containing ice, and stir carefully for about 60 seconds until cold. Pour into a frosted cocktail glass or equivalent, garnish with the cranberries and finish by giving it a light spray of mandarin oil over the drink.
